It taste as colorful as it looks.
This is for the start of the fasting season. Because I’m Christian orthodox a couple of times a year I go on the vegan side. I could never give up meat…but I can postpone eating meat a couple of days/weeks. I also do not use eggs and milk- animal protein. But this year I have some vegan recipes I am dying to try- some old, some new- please tell me what you think.
I found this recipe in the morning while I was enjoying my coffee. The coffee story I will tell anther time.
This is Martha Steward’s famous recipe. Martha Stewart’s Famous One Pot Pasta Recipe – Martha Stewart
This recipe is simple, easy and fast.
All you need is the ingredients you have at hand and a little love. But for this recipe I used:
- 200-250 grams pasta of your liking around
- 200-250 grams cherry tomatoes
- 1 pepper
- 1 small onion
- 1 chili pepper ( mine wasn’t that chili- that’s why I used powder)
- 4-5 cloves of garlic
- 1 celery stalk (Apio)
- basil – you can add fresh but I had only dried
- 2-3 spoons of olive oil
- 600 ml water/vegetable broth
- one large pan
To begin you have to slice all the vegetables very thin- as thin as you can.
Put the pasta in the middle of the pot, layer the vegetables on either side , add the seasoning that you like…I added a little smoked paprika, cayenne pepper, and oregano to the others I listed.
Drizzle the olive oil and add the water.
Bring to boil and in 10 minutes you will have the perfect pasta.
The hardest thing you have to do is to stir the pasta all through the process- that’s about 10 minutes.
And voila…you have a hot dish of pasta with minimal mess. I just have to clean the one pan…and the dishes of course but it is really time saving.
You can also add the cheese of your liking if you are not vegan or fasting. And as you can see I combined two kinds of pasta. I like to keep it interesting 🙂
