Hi, I’m Stephanie and I love to eat. Eating tasteless food is not for me. Thus, after giving up for fasting meat, eggs, milk … I only have taste.
For those who love the salads this is a combination that should be attempted. In fact it is so simple that I bet it will be your favorite. It is simple, quick and very tasty.
The aroma is given the mayonnaise and flavor comes from pickled cucumbers.
- 5 potatoes
- 1 carrot
- 300 g mayonnaise
- 1 green pepper
- salt pepper to taste
Place potatoes and carrots to a boil. I wanted to use a sweet potato but it was not cooked in time so I left it aside to be used in another way.
For the vegan mayonnaise you will need: 100 ml soy milk, 200 ml of vegetable oil, salt, one teaspoonful of mustard, garlic powder.
Place in the blender jar the mustard, milk, salt, garlic powder and then add the oil. Start the blender in the highest position and do not move until oil is incorporated. If the composition is too liquid add more oil until we reach the desired consistency.
Clean the vegetables, cut the pepper and radishes into cubes . Cut the pickled cucumbers and drain the water. Place the olives and then dice the boiled and cooled vegetables. Add salt and pepper and then incorporate the mayonnaise.
The taste is perfect, very fresh and soothing.
Try it on days when you need a comfort food.
